Nice looking bike (and it's the right color...), and a good price too. I'd be thinking about doing a lifter change with almost 80k on the engine. Unless you've got the service records to show it's been done. The stock 91 cam is a better cam than the one they put in my 93 FLHS. So unless you want to increase your smile factor, keep it. FWIW, I run an Andrews EV27 in my 1993 FLHS.
Wheel bearings are the 'old school' pack 'em yourself. They will last longer than you if properly maintained. I would suggest repacking every tire change. And stay away from car washes or pressure washers.
Brake fluid may need to be flushed.
On the ElectraGlides, you check the engine oil on the Jiffy Stand. The primary and transmission oils while the bike is upright and level. Everyone has their favorite oils. It's a subjective thing. FWIW, I run the Harley 20w50 oil (dino oil... not synthetic) in the engine, and the Formula+ in the primary. I run Mobil1 gear lube in the transmission. There are many, many options. With the EVO, I'd be thinking about engine oil changes every 2500-3000 miles. Might as well do the primary at that time too. The trans can go every other oil change.
As posted, get the FSM (factory service manual) AND I would highly suggest getting the FPM (factory parts manual). Although a lot of the parts have been obsoleted by The MoCo, some are still available. And having the part number makes internet searching a lot easier.

Hi Mitch from the UK and welcome to HDF. Great looking bike, so well done for finding and buying it. Plainly a man of taste!
I agree the batwing is a genuine Harley one - similar to the earlier shovel ones, like I have on my FLHS. Looks as if the original owner had the batwing and tourpak colour-matched, possibly from new. I bought mine new in 1990, but the cost of the 'proper' batwing and tourpak at the time were astronomical, IMHO, so I went hunting for secondhand ones instead. Been tinkering ever since....

You'll probably find your alternator plug is weeping a bit of oil, too. Common problem (well, minor annoyance) with Evos. You can clean it thoroughly with brake cleaner and apply some flowable RTV to seal it up, at least for a couple of years.
Depending on how its run and cared for, Evos last a long time. I'd be looking at the tappet rollers and inner cam bearing, as that's the only real weakness in the motor.
