Default Popping and coughing

Bike runs normal at idle but when in gear it pops coughs and stalls out between 2-3 k on the tach. After I get to 3100 on the yacht he stall will disappear and about 98% of the coughing and pooping.
Cleaned out the tank traded out all the rubber lines on the tank and the fuel filter. Thinking it might have been trash passing threw. Went ahead and order new plugs wires and coil see if that might help. Also checked the slow jet it is a 30. Told that the bike runs on the slow jet till I break 3000 rpms.

What carb? S&S is a .295 or .31 usually. Nothing that small in a CV that I've seen..

Did it just start doing this out of the blue? Or has it done it since you have owned it?

Need more motor build specs, year and size. Have you checked your float level?

That carb is way too big for an 80" motor!!!

That said as said above check for intake leaks.
