Red Rock, Valley of Fire, Mt. Charleston, Mountain Springs (Mt. Potosi on the way to Pahrump), Hoover Dam, Laughlin/Colorado river, Oatman, AZ, Pioneer Saloon (Sandy Valley) are all easy day trips. Zion National Park in Utah is a little further, but would be a fun (and cooler) overnight trip.
You could also do an overnighter down to Williams, AZ and the Grand Canyon.

Do not miss this ride.
One thing I have learned about riding out here is that a long sleeve WHITE shirt will be cooler than a short sleeve one. 115* will absolutely bake your arms uncovered. A trip thru Zion, Bryce Canyon, and back thru the Grand Canyon would be an awesome 2 day ride. So much to see and you can take your time and lots of pics.

Red Rock Canyon within 20 minutes or less of vegas... Valley of Fire about an hour north of Vegas. . . that was awesome. . . pretty hot even at the end of May when we went last year, but worth it Hoover Dam...looked smaller than we expected but Kingman Arizona overnight and go to Oatman, that was a cool ride and burros to feed carrots to it was kinda cute, but the ride up was amazing

Wow. Thanks for all the info so far. And I can change the date to Sept. or Oct. with no problem. Originally set it for August because we are cancelling another trip. Major heat is no problem for us, since we're coming up from FL, where we regularly ride 300 miles every Sunday in blazing heat and humidity. But if it's more comfortable in Sept. or Oct., then I'm all for that.
From others I've talked to who've been there, they told me go in the summer, as it's much cooler in the higher elevations. There is no elevation difference in Florida.

Heed the warnings. The heat here is dry, which means the faster you go the hotter it feels.
In Florida there is moisture in the air. Sometimes the wind from riding may cool you a bit. Not out here. It is truly like a hot air gun. The folks at the dealership should take good care of you and offer great advice.
Drinks lots of water and find cool places.
