Sorry, a bit of a FP3 novice here... Where do you access the idle/rev limiter screen(s)? I don't remember seeing them, on the canned tune or on autotune.

You access those when the canned tune is loaded in.
Just keep in mind the redline issue. Hopefully it errors on the safe side like mine did at 6500. You may have to upload your tune so V&H's can look at it like they are doing with mine.
I just uploaded the new firmware and adjusted my 16 Road king "stage 1" warm idle from 1000 to 950 and my rev limiter from 5400 to 5800. I'm thinking both adjustments should still be on the safe side?
The issue being discussed here is with the Street Rod. I have no idea how the update will affect other models in the H-D line up.
Seems I'm not the only one that has contacted V&H's about the update. Here is a snippet of one of the emails from my CSR at V&H's
"As my fuelpak manager brought it up to our attention that is correct. You are definitely not the only one. They're working on rolling out another update."
This was in response to me telling him about your 12000K rev limit setting you saw daisy cutter. So, we sit and wait. It's no down into the 30's here for highs so I'm in no rush.

Don't go any lower than 900 on the idle. I'm pretty sure you can safely go up to 6400 on the rev limiter - 1000 over stock as the H-D download does this.
