Should I get another Pan America?

That's why I am putting a chain oiler on this one. I think half the battle is keeping the chain lubed. If you do that, it also makes it much easier to keep clean and a good wipe with a rag while on the centre stand should be sufficient.
I have ordered the Cobrra NEMO II Oiler. It's a manual system, very simple to use and no need for things like power connections or vacuum take-offs. It also gets great reviews from the ADV community and is cheap too.
In fairness, in over 20K miles, my chain required almost zero adjustment after the initial break-in period, but it was the cleaning and lubing that was a bit of a pain in the ***. Hopefully, the Nemo oiler will make this much easier.

But, if I was new into the bike and needed luggage, lights, bash plates and stuff....I would probably buy the CVO.

I think the CVO is actually a pretty decent deal. I had all the accessories already, and knowing the dealer won't give you much at all on trade in for accessories, I decided to swap everything from the old bike to the new.
