With the Vance and Hines, you can probably put any of the Softail bags on. The biggest drawback to bags on a Fatboy is the shotgun exhaust that comes up too high to allow for bags of any size.

Here is a pic of my fatboy with bags. Im not sure what the dimensions are. When I get a chance I will measure them for you. But as you can see the shotgun style exhuast gets in the way. The bags on mine are the fatboy model bags from HD. Like it was mentioned if you switch out your pipes for the VandH or even the SE 16ga you will gain a bit more room for bags. Hope this helps.

On my old FatBoy I changed the exhaust out. I couldn't take the shotgun pipes and itty bitty bags. I put on Heritage type exhaust, which is two pipes on right side down low. After that it would take any sized bags. A two into one system would look great on a Fat Boy also, or hey, even a dual set-up would look awesome, one pipe per side. Duals always look cool. Anyway, its' either that or you'll have to deal with the little bags.

You also need to factor in if you are doing any 2-up riding - The difference between an 18" bag and a 20" bag can be huge if you have a passenger
