A slip-on is a slip-on... they just sound different (maybe)...
Naaa... you don't have to remap with exhaust change... The bike runs lean from the factory... the reason you need a remap after you install a free flow air cleaner is that you're getting even more air in and lean the air fuel mixture even more... so you do a remap to get more fuel in with that air...
Had my SE's installed before it ever left the dealer... no worries there...

Put a few hundred miles on it first, and get the first service done. At that time, install your new mufflers ortake your new V&H Straight Shot slip ons to the dealer and have them do at the same time as the first service. If you want the ponies, then buy the SE A/C Kit, and the remap. If all you want is the sound, just change the mufflers for the ones you said and there should be no issue whatsoever. If it does pop or fart on ya, then go buy the A/C and Remap which will set you back another 300.00 to 400.00 from the dealer. The payoff is you'll pick up about 15 HP or so, and that'll make you smile. Trust me. Been there!

As most mentioned already, slip-ons do not require any ECM updates, etc. Doesn't matter whether it's an HD brand or some other after-market as long as you're not going with some after-market drag pipe, you should be good to go. Study the slip-ons out there, listen to some at local bike rallies, you will get an idea of what you want your bike to sound like. Good luck.

I just had my 1k services done and now I am seriously considering modifying the bike to my liking. I agree with the others, wait until you've gotten comfortable with the bike. Just because you hit a hundred miles and know how to pull Us without dropping doesn't make you comfortable. Give it some time and learn the bike's and your limits with it.

I had Rush slip ons installed at 6K on my 07 and it was then running extremely rich (mileage dropped 10MPG) and stalled while warming up in temps under 45. I had to have a stage 1 download to correct the problem. I have to question why the HD tech didn't do that when he installed the slipons. But since the 07s were the first sportys to have EFI maybe he just didn't know.
