Going on in my quest to pick an exhaust system for my bike, I'm seeing a lot of people going 2 into 1....the pro pipe or the fat cat. I know that its probably better overall, but doesn't it look funny only having a pipe coming out of one side?

A good 2-1-2 pipe (like the V&H Power duals) will give you 95% of the performance benefits (exhaust scavenging) of a 2-1.
I have never liked the idea of a fake or ghost left pipe. If you go 2-1, learn to like the look. Who wants a "poser pipe"? I do think 2-1's look pretty bitchin' on extended bag bikes that only have 1 exhaust cutout.

no it dosn't at least not to me. I almost didn't buy a touring bike because of the
looks of the exhaust pipes, but I loved the cruse control more than I hated the
stock exhaust. To me ALL harleys should have two pipes on the righr hand side
of the bike.
