That S&S video clip is the one I used when I changed mine out. I watched it through to the end first before I turned a wrench on the bike. It's not a difficult job at all if one is even half reasonable as a shade tree wrench.

I just did my own cams last weekend using that video and my shop manual. I have all the tools except bearing puller/installer and was able to borrow those. I've got less than $200 parts and labor into it.
I'd go shopping for a reputable indy before even considering the dealers. I got a popular guy downtown to install pistons, cams, clutch spring, Stage 1 air cleaner and even picked it up and delivered it without a fingerprint on it for $500 plus $100 for the boring of the jugs. I also got one big shop to quote me just about $1300 because he said for a cam / jug change the motor has to come out of the frame, there's no way around it. I thanked him and went on with my search haha.
Seems like pricing varies alot depending on where you go but I just paid $850 for labor to install a 107 big bore kit, S&S cams & upgraded clutch spring.
