Sounds like you need a new ignition module...

Or main circuit breaker, crank sansor, cam sensor and bas
Sensor. Any of those could do the intermittent shut of thing.

Mine would shut down after a couple of miles. Replaced crank sensor.

Probably a marginally loose connection someplace.

Connection is ok when bike is cold. When bike warms up, parts expand with the heat, connection becomes intermittent?

Carb or EFI was a good question.

I had also had a 2000 Ultra (EFI) and unfortunately, these bikes have the MM EFI system.

Before wasting your money on anything else, see if you local H-D dealership and diagnose your problem (should be easy if your bike "coded").
I started having issues with my bike and it wouldn't "code".
That turned out to be a defective Engine Temp Switch.
However, after that switch was replaced the bike then "coded" and that indicated a defective ECM.
We couldn't locate and OEM model so we went with an aftermarket brand and it made the bike run OK but after that was installed the bike never started like it did before.

I also had an issue with the bike "stalling out" and sometimes being difficult to start and that turned out to be a defective handlebar "kill switch".

Good luck.

You've got a few suggestions here, ......have you made any progress diagnosing this?
