Default Apes question

Ive got my night train on order. Im planning on putting apes on it, but im not able to sit on any bikes with them for the time being. Im about 6ft1, what is the recommended height for my size? I was also curious as to how apes change your turning?

I’m 5”11” and have 16’s on 1” risers, and they're just at shoulder height. I find they really help in cornering. I usually drag my pegs in corners; and I find that you have a lot more leverage going into a corner making it much more responsive.
