This depends on how you tune it afterwards and where in the rpm band you want your most power.
General rule of thumb:
No baffles gives less mid range power 2000-4000 rpm, more top end power 4000-6000 rpm.
With baffles gives more mid range and less top end.
When you see"more" and "less" that equates to 5-30 hp & torque.
If you just want to get the highest numbers on a dyno and don't care how it runs at idlethen remove the baffles. Just remember you have less power than the baffle guy untill you wind it up.

you lose torque period. knocking out the baffles is about the most detrimental thing you can do . all it does is make more noise. you may if your lucky you maygain a couple of hp at wide open throttle but that will be offset by the cost of replacing burnt valves if you dont re-jet or re-map the fuel delivery system.
