What a total newb question. Only people that can answer this (w/o sarcasm) are people that haven't really done any mods.
SE120R is a neat mod.
But maybe it's not a mod since it's a crate engine.
I got one in my Lowtato and another sittin' on the floor with 15k trouble free miles on it.

But the single best mod, would have to be the cruise control..
Since Harley stopped making the kit a long time ago, I had to do some serious searching and hunting to find one..
Bought a kit from the dealers in Tecumseh, Michigan..
They said "well it says on the box that it's missing parts".. But the module and harness are in there. We can give you 25% off since the box is open"..
I bought it, and it was missing 4 black cable ties. LOL
Excellent mod.. Makes the long trips nicer.
The fairing with stereo, amp, and speakers was a nice one too.
Over the years of riding my ol 1987 FLT I've changed quite a few things to make her a better ride. By far the most bestest thing was taking the ol butterfly Kehin carb off, chunkin it out back and installing a S&S super "E"carb. Besides looking way cool, she runs so much better. Fuel mileage went down a little but the performance improvement was well worth it. Fish tail straight pipes with a little baffle"for some back pressure" helped to scare little children. High rise pull back buck horn bars," Had to ditch the apes , Shoulders are shot." Good shocks, solo seat, I guess there's more. Later, gotta ride. Killer

That is way up high on my to do list. What did you pay? I found this. Pricey but gotta have it.
