Cometic MLS .030" head gasket. Do not use dowel O-rings and follow Cometic torque instructions.

Would I be better off Picking a different camshaft as well? I mainly ride lots of Twisties and some Highway and to up every now and then

Yes. A coupe you might consider are the S&S570, TMan555, Woods555 or Andrews54. IIRC, the springs on those heads limit lift to .575". If you update springs to later beehives, you could look at cams with higher lifts but without porting, the heads won't be able to take full advantage of the higher left.
