EFI to Carb swap

I have not done this, but I know EFI and carbs, so: You'll need a new intake manifold and a carb, of course. The CV carbs seem to be popular, but I have an S&S. There is a fuel pump in your system somewhere, so that will have to be removed from between your fuel tank and the carb. I dont' know if you can use your existing tank by removing the fuel pump and adding a petcock or if you'd need a new tank.
If you go this route, I'll buy your old intake manifold assembly with the throttle body for $50.

EFI to Carb
Have a friend that converted his 97 ultra efi to S&S using the same tank etc. Eliminated the fuel pump and in tank filter and you also have to change out your throttle cables. The tank has two lines one of which is plugged off and the other the petcock is added to.Also you have to change the manifold etc as listed in a previous post.There is a wiring change also but I can't recall the specifics other than the ignition wire went from a two lead to a single lead (I Think)

I converted the Bagger below from M&M injection to a Mikuni carb.
I have the parts list that I used in an excel file I can send you. Keep in mind my bike is an 01 so I was able to source the parts from a carbed 01. I would think the same approach for your year would net you the same results.

Two of my bikes are EFI and one is carbed. I really like how the EFI works, so, what would be the advantage of the swap? Just curious.
