Default Cat conv. removal 2012 CVO proceedure

I know Panheads and Shovels, but my ole lady's fat *** won't fit on the Pan, so I had to buy this CVO, only cause it was dirt cheap, and I borrowed 10k from my mother-in-law.
I need to know what exactly what goes on in eliminating the cat from my bone stock 2012 CVO. ......1.- Whats the best way to cut it out of the exhaust?
2.-Does the bike's computer have to be re-set and if it does can it be re-set by a shop other than the H-D stealership?
3.-If I went with a true dual set-up with no cat, would the same apply with the re-set bullsh*t ?

if you remove that cat or change the system to one with no cat, yes you will need to have the bike re-tuned. modern fuel injection tuning is best left to a pro if you don't have any experience with it as the modern control systems in the new bikes is way more involved than a set of points and some carb jets.
