EVO Engine Problem
All the recommendations are good. I would check the fuel petcock valve. If any debris traveled from the tank to the valve, it could accumulate there causing some intermittent fuel issues, especially when riding on less than perfect road. I had a 96 softail. I changed the stock fuel petcock to a Pingel. Flows more fuel.
You say the lights still work fine when the engine cuts out which points me to a fuel issue. Good luck and keep us posted when you track down the cause.

It has had an after market one on since 99. After the second time it died while waiting for a light I drained the tank and got a lot of paint chips and crap around the petcock screen. I flushed the tank and the screen didn't look like it had any tears so I assumed there was nothing in the petcock.
Isn't the " engine " you either have a fuel blockage or a developing electrical issue with either an intermittent short or a funky circuit breaker. I'd go through the fuel system first like many suggested already the in tank screen on the petcocks are a big offender of getting plugged up. Making sure you have good flow then look into the circuit breakers they do get weak over time and will trip in & out like that.
I have a 98 Fat Boy with 21 thousand miles that for the last couple of months has been giving me grief. Almost every time I go riding the engine will quit at least once either when stopped at a light or doing highway speed. When it quits when I am stopped it will start again after cranking for a little while. When it quits while doing highway speeds it will all of a sudden start again, it seems kind of like when you run out of fuel and then turn on reserve. One other thing, the engine will backfire, sometimes very loud now and then. I have checked the coil, changed the plugs and wires, drained the fuel tank looking for garbage which I found and corrected and it is still happening. I have had it in a good shop but they haven't been able to duplicate the problem after a week so I picked it up. On my way home it happened again. The bike runs well before and after these events. I am running a EV 27 cam, stock CV Carb, Hypercharger air cleaner and Vance and Hines exhaust, any thoughts?

fabricate a large funnel to catch fuel and slip it under petcock to catch in bucket
without smoking loosen the nut that holds petcock to tank, lower petcock to dump some fuel and replace petcock and tighten nut. This my sound inane but it gets a lot of crud surrounding bottom of petcock and sediment in tank.

I had a similar issue on a buell. Check battery cables and ground. May even have a battery cable going south. I did a bunch of stuff trying to fix the same intermittent issue on the buell and it turned out the easiest fix was the one I should have started with.
