Dealer Service Closed on Mondays?

OP, sounds like you've not been around the motorcycle world very long, and especially the Harley for certain! The reason given back in the day for Sunday Monday closures was "race on Sunday...fix on Monday"!
Things began changing in SoCal maybe in the early nineties, maybe the mid nineties...out here, it's pretty much the norm, and expected.
A story...maybe three years ago, a motorcycle superstore opened up in my town, right across the street from the very active, very successful Harley store. Absolutely the best location it could be...when you pulled outta the Harley parking lot, you were looking directly at a sign said 'Indian' in BIG letters! The bad thang? Well, they were closed Sundays...and in SoCal, you can sell the wazoo out of new and used motorcycles at a dealership...but they were closed.
They lasted not two years. Of course, there may have been additional or other issues, but to my thinkin', you GOT to take every advantage you can when you're the new kid in town! Including being open on Sundays.

Most dealers, Harley, Suzuki, Triumph have their shop open Saturday, so Sunday and Monday is the normal day off for the mechanics. Been that way since 1964. I assume the person you spoke with just assumed you knew. I would have and figured your wife was in the car waiting to drive you home.
In some destination areas, they keep a few mechanics on Monday, some on Sunday as tourist season brings in lots of transient riders. Now you know. Most dealerships remain open, 7 days during the riding season as sales and parts and apparel keeps the front end busy. Many close Sunday/Monday in the snow belt.

It varies by dealer/shop
My indy and most others are closed on Sunday/Monday. My closest dealer is 7 days a week for everything, but another Harley dealer in Phoenix the service desk is closed on Sundays. It really depends on what the owners want to do, and if there is enough business to warrant being a 7 day shop, balanced with how they want to rotate employee off days.
