Question regarding Bars on a 2016 Softail Slim S

Im about to buy a Softail Slim S and wanted to change the bars out but the dealer is saying its $2700 because the Slim S has fly-by-wire and a hydraulic clutch.
I believe them that its there, but I work in the Car Business, and $2700 for a little bit of metal,labor, and cables sounds like total bullshit.

I have no idea if that is a fair price or not, although it does sound an awful lot! However in the Harley world there are two ways of going about things, one of which involves cutting every corner that can be found! You may recognise that in your work. A mainstream dealer is going to do things by the book and rigorously well (we hope!).
Have you asked them for a breakdown and to explain that cost? If you want taller bars for example, which require extending each individual wire to the handlebar controls, that is going to be labour intensive. When done by rank amateurs it is also a common source of electrical problems around here.
