Trust Your Dealer Service?
I changed my motor oil today on my 2016 RK and to my horror it drained a bit over 2 quarts! The manual calls for 4. Videos and people say it's just under 4. Luckily I only put 3k miles since the last oil change done by my dealer!
I posted on another thread last year how the front suspension, upgraded to Legend had different amount of oil in each leg and different setting.
And another thread last year on how they didn't have a mechanic who can adjust my carburetor on my older Sportster.
This dealer is about the only reputable one in the west suburbs in Chicagoland. Three strikes and I'm done. I'd be doing my own work from now on.
I suppose the question is, was there a damage to my bike running it with potentially low oil? No warning light.

So, you rode the bike 3,000 miles without checking the oil? 
Unless you checked it right after the oil change, you can`t say how much they put in.
Check the oil every once in a while, that is what the dipstick is for.
Maybe it`s time to start doing your own work or find another mechanic, since this is the third complaint you have posted about this dealer.

New, quality techs are hard to find when the long-timers retire. We had that problem at work, and I see the same at the local HD Dealer. I went back to the service bays with the Service Writer. Some of those guys had difficulty using a wrench. yeesh

For a 2016 Harley-Davidson Road King (Twin Cam 103 engine), Harley-Davidson officially considers oil consumption of up to 1 quart every 1,000 to 1,500 miles to be within the "normal" range.
Seems if the dealer had put in 4 quarts then it's in range for what you drained out.

Learn to do all of your own maintenance, on all the vehicles you own. That way it gets done right, and if you do it wrong, there is no one to answer to the issue other than yourself.
