I have a 2010 Fat Goy Low with a Stage One. I am looking to upgrade to a Stage 2 and maybe even a Stage 3 at some point. Any suggestions how what might be the best tuner to get? The Screaming Eagle looks ok but from what I have learned, it is limited to the Stage One. I was considering the Vance and Hines as well......lots of options out there. I'd like to hear your thoughts.....

I am looking for more HP and performance, and a cooler running engine.

Look into the TTS Mastertune. They have different maps for different stages and you can V-tune the bike yourself which will save you substantial $.
