The thinner Dunlop 400 series, like my 1200C had, follow tar snakes and wiggle on pavement irregularities something awful. For best results you probably want something with tread like sportbike tires, like Avons or Pirellis. They'll give you better traction, too, something to think about with skinny tires.
Here's a chart for tire/rim fit, but there's more to it than just that, the fattest that will fit your rear rim may not have enough clearance in the bike, that's something you'd have to determine, too. Most manufacturers have dimension info, and you could measure the bike to see how wide a tire will fit.
