i always thought they were the easiest of any cable to replace, the tricky part is getting the tension right, but even if you dont its not catastrphic like a clutch cable snapping or a brake line leaking or bursting.
you need the carb off, which means you DONT have to take off the tank, and you need to remove your handgrip from the handlebar.

I just replaced mine on an 05. I have the peanut tank but had it removed to extend the wiring for new bars. At minimum you need to remove the entire air cleaner. Got the cables installed the "first time" in maybe 5 mimutes on the carb end. I then had the idle cable come out of the carb end. Had to take the cleaner off again and this time it took me 15 minutes to get the idle ferrule back on the carb. I used a dental pick to grab the small spring that is on the idle cable end.
