I touched the triple digits one time, with my tall shield on, and the bike was rock solid. I worry more about debris and critters running across the road at those speeds, than the bike wobble. This was on Dunlop American Elites, by the way. The OEM Dunlops were not that stable.
If anyone has high speed wobble, I would look first at tires, then front fender bolts (acts as a fork brace) and fork head bearings. A windshield that is properly mounted should not cause wobble.

And it seems that it does not happen anymore since I removed the windshield.

No, all stock. However I used to wind up the rear shock to 3/4 of preload, while based on my weight I have to add just 2-3 clicks from minimal preload.
