Im thinking about trading in my 07 street glide for a used 2014 model SG with 21,000 miles on it. The dealership is asking 18,000.00 for the 14 model. I owe 8,300.00 on my bike that Ive had for almost 2 years. Im thinking that I should get at least 2000-2500 dollars after they pay it off. I really like my 07. It drives great and it's my first Harley. But, Im thinking that If I keep it, it will be almost 12 years old when I pay it off. If they can make me a good deal I may take it. Is there anything I should know before I walk into the dealership? Im going tomorrow to get the trade in value on my 07. Is there a big difference in the handling? I know the engine is bigger, but Im not sure about all the other bells and whistles.

What's wrong with a 12 year old bike? If you have a 6 speed in it, and if you were my friend, I'd do everything I could do to talk you out of financing something newer AT THIS TIME (assuming that's what you're going to do). You're walking backward on a depreciating asset if that's the case.
If it has a 6 speed tans in it, have you considered a BB kit and doing some things to shore up the frame? Lots you can do there.
I am not one that can answer your questions though, so if financial pragmatism isn't a consideration....disregard.
I ride an 07 Street glide too. A few months ago I test rode a 15 Road Glide and was offered 12 for my bike and a fantastic out the door price on either a roadie or a sg. As much as I would like to have a brand new bike, the though of spending 4 or 5 thousand to get it right, made me pass on it. For now anyway.
Is there anything I should know before I walk into the dealership?

Yes, don't go! If yah do go, don't ride the '14 it'll follow yah home. Seriously, there was a HUGE difference bewtween my '12 + '15. I already had the new frame + 103. There's a much bigger diff between your '07 + the '14. That said, I'm not a big fan of financing motorcycles. IMO it's a luxury not a necessity. If yah really want one, you'll find a way to pay for it.
If you are going to sell or trade your 07 then buy a brand new 2015 SG or SGS. In fact you can probably buy a 15 for the same price with better financing and a warranty. Personally I'd stay with what you have if you are happy.
I would get/keep and ride what you want - why you asking a bunch of knuckleheads like us what you should ride
That being said, I traded in my 13' Fat Bob for a 15' Street Glide and I still have a smile on my face as I'm riding what I want to ride...
