I think you might get a bit of sticker shock once you dig into this project, as receivers go from $500 to well over $1,000.
Speakers (front fairing and bag lids) will set you back $500+, add another $200 if you want to have speakers in the lower fairings.
An amp (or two) will be $150+ each (minimum).
Soundstream, Rockford Fosgate, and Aquatics are the "Big Three" brands for replacements that I'm aware of.
Iron Cross can upgrade the factory radio to give you the bells and whistles that weren't available back in 07.
Depending on your preferences that could cost as much as a replacement.
I decided on the Rockford Fosgate with Polk Audio marine-grade speakers.
No amp for me (at least not this year), as I almost never even turn the radio on... I prefer to stream to my Cardo.

I am surprised I can't replace 17 year old technology for something cheap and still be better than something 17 years old.
I am really happy with my 2015 stereo, I think I am going to leave exhaust stock, I am embarrassed to say.
I have put lots of miles on 2007 stereo. You pick songs that you hear better, and now the words. Sucks for passenger though. One of these days will update.
I followed link to some stereos that were not awful. But not sure how much they will get me, other than bluetooth,

I ordered these last week for a bit more power and is the most cost effective upgrade for me. They should get here tomorrow.
I'm keeping the stock radio, I have a little blue tooth player that I stream music from my phone to the Aux input.
If you wand a Double Din you will need to replace the inner fairing and get a new head unit, I looked into it and bailed out due to the price.
A single Din is cheaper but it is still expensive and you may still need an amp. With a new radio you may loose some functions and the CB if you don't get the saddle tramp Handlebar Controls Interface box or something like it.
Hope this helps you.

sound digital amp 800watts and mmatts 6.5 in batwing sounds a lot better than before. about $700 i use stock head unit. i do use a i pod connected to it so its clear. will go to fosgate 9713 one day.
this will get u started. i plan to add 2 6.5 mmatts to lowers soon. same amp will power all 4.
mmatts is making amps now . might be worth a shot, but sound digital is nice.

I do not care if I have a touch screen. Granted i like it on my new bike, but would be happy without on old bike. . Also I think bad idea now to reuse 17 year old head unit. CD player has been acting up too.
I really would just like bluetooth. The donlge I was using was flaky. I bought one that prodcasts on fm. Problem with bluetooth even on my new bike is it is slow, and has to be manually started. Unlike my truck which starts on own,
