Congrats on the bike. I think the first thing you should do is to get the bike and just ride it. As you ride it you will figure out what you want to change and in what order. If you need helmets, the major companies make the helmets for Harley. I would look at getting an HJC or Shoei branded helmet from another outlet.

Of lesser importance: XM radio, a recurve windshield (Klock Werks good but pricey, try Clearview) and a seat your wife will be happy with.
The only seat my wife has been truly happy with is an Ultimate; expensive and your HD certificate won’t pay for it but even a Sundowner didn’t work for her after 100 miles. And she only weighs 98 pounds so it’s not what most of you are thinking.
Keep it stock; take a long time thinking over any mechanical changes.
Offer to swap rides with anyone who has a set of bars (or anything else) you think you might like. They become very expensive if you find out you don’t like the ones you switched to.

Since you have $2500, The Sundowner is a good seat, Aileron handgrips were my choice, the King Tourpak turns the back seat into a recliner. Passenger Footboards were appreciated by my wife. I went Heavy Breather from new, some say its in the way. I think its awesome.

A better seat & backrest for the wifey. The SG shocks aren't that great for solo riding & 2-up the wife will not be happy. You'll want to look into changing them. I usually do add ons that make my bike more rider/passenger friendly first. Just my 2 cents. Congrats on your new bike. Be safe!!

the first two accessories you would need are first, a good map of the usa, and second, a taller windshield unless you like being blasted with wind from your chest to the top of your head. get it broken in properly, enjoy your new bike, and study before buying accessories. there's plenty of time for that. it costs about half the price to do things the right way the first time rather than the second time, so take your time, find out what you can, and make educated choices as far as how to accessorize your bike.

The four point docking hardware is very convenient. The 2011 seat is newly designed and much more comfortable and works for me. Same for the windshield, I'm 5'9 and dont have any problem with the wind, or it just doesnt bother me! Performance I went with Bub Seven True duals, HD heavy breather and HD SE tuner and I love it. Also, I lowered the front end with the HD kit, which I really like. PM Seven wheels are on the way.... can't wait!
My best advice is would be to take some time and see what "theme" you end up liking the most. I planned on going all chrome, I've started getting into powdercoating and now I'm doing a mix for the contrast of black and chrome, which I didnt originally plan on. This may save you some money instead of trading stuff out later on.
BTW, I have an 11 SG in Sedona Orange with the 103.
