Differences
I put a Harley Sundowner solo seat on my Deluxe - huge improvement. I also went with H-D Get-A-Grip grips. Much more comfortable. As for front fangs, I took the fangs off my 2015 Slim, drilled a new mounting hole on each fang, and put them on my Deluxe. They work great and look good.
Two tips.
1. Riding in the mountains, you will definitely need the Stage 1 Upgrade. Like you, I am an old guy and ride solo; therefore, the performance of the M8 107 is all I need. But, the M8 needs more air and fuel than you get with the OE EPA compliance tune--particularly at elevations and during hot, humid summer rides.
2. Harley makes many upgraded grips that are first-rate. You shouldn't have any difficulty finding one with fit & feel that is just right for you. If you ride all year long, consider getting heated grips.

The S&S slip-on mufflers are 100% compliant and won't affect your warranty. I like them because the shorter length makes checking the rear tire pressure easier.
Heck Albuquerque was 5 thousand feet and uphill from there. My 93 Heritage really struggled out there.
