So a couple days ago I installed a Sony xav-ax100 stereo and a set of infinity kappa 62.11i speakers in my Road Glide Special. So far, it’s better than the stock set up. My bike isn’t very quiet and I typically have my volume set around 36 or 37 when at 60mph and above. With the EQ set to the “rock” setting and the bass boost set on 2, I get crazy distortion at 41. With the base boost off, I don’t get the distortion until 46 or 47. It sounds awesome with the boost on, before I notice the distortion and good with the boost off.
now, I know this stereo doesn’t put out enough power to really drive these speakers to their full potential. What has me concerned is that my friend, while not an audiophile, he noticed that my stereo’s is 4-8ohm and my speakers are 2 ohm. What am I about to tear up and what is the best way forward?

First things first. You need an amp. PERIOD! From what I see you are running a head unit and speakers with no power. Distortion is the norm without an amp. Add some power and you will be much better off . Tons of info on this site on amp recommendations, and tons of great dudes to help you out.

Rule of thumb is you can go up with speaker resistance but dont go down as it will overwork the amp/headunit and possibly let the magic smoke out.
I would suggest getting yourself an amp to get the volume you are looking for when riding.
Post up a budget for and amp and we can suggest one suitable for your setup and future expansion

i dont have a budget. I dont want to spend a fortune and just want it one and done. I dont plan on adding bag speakers. 2 channels are all I need.
If you only need 2 channels then go or the Cerwin Vega B52. It has always been a good match with those kappa's and cheaper than the B54. Not to mention smalller and easier to fit.
