Have to have a good tuning interface. Mine is turned off using my TTS. Gotta spend money to play the game!
EITMS is Engine Idle Temperature Management System, it's basically a system where once the engine reaches a pre-determined temperature the EITMS will turn off the rear cylinder fuel so the engine will hopefully cool down, a side benefit HD claims is increased rider comfort due to less heat and I have no earthly idea if you have it in your '07.
budabelly, you have a couple of options: Live with it, convince the dealer to disable it or buy a good fuel management device and turn it off yourself. I opted for a Power Vision, beyond all the other amazing features it has you also have the ability to turn off EITMS, my '13 WG had EITMS turned off the first day the WG and the Power Vision met...

l'm pretty sure it's only 08 onwards bikes that have it and l'm also pretty sure you need a tuner of some type to switch it off, though l'm not sure why you'd want to.
The rule for dealers in 2008, when it first appeared, was they had to turn it on or off for each customer free of charge, once. I would imagine this has changed by now. I also read somewhere that the MoCo no longer says it is to cool down the engine, it is to increase rider comfort.
My Ultra Classic has done it a few times, it doesn't really bother me.
Why do you want to disable it? It helps protect the engine, increases rider comfort, and the engine automatically goes back to standard operation once you are moving or give it throttle anyway.
Shortly after I purchased my bike in 10' I had my turned on, wish I adn't because it's annoying. I ask the dealer if there was a charge, they told me that HD allows one switch free of charge. So if it was on, they would turn it off or if it was off they would turn it on. After that first switch, they had to charge for any additional switches. I don't know how much they would charge, but it took them like 3 minutes to make the change. When I got my tuner from Superchips and tuned the bike, the eitms went away.
