Default Dyna Cafe/Buffet Racer

Hey y'all. I'm new to posting on the forum. A while back I saw some posts about dyna cafe/buffet (someone else coined that term) and I just wanted to see if anyone is riding a buffet racer out there.

Was thinking about that myself.
Quite a few ideas here:

One problem with Dynas is it's hard to figure out where to put rear-sets (if you want to do that), with the clutch cover sticking out so far.

I would be interested to see how to do this. I have seen a total of 1 dyna set up like that and I couldn't find anything more than a picture.
