Default 2000 Super Glide throttle response problem

Hey all. It’s been a while since I’ve been on here and hope someone can help with an issue I can’t seem to figure out.

I got a 2000 fxdx with a 103 Stroker. I’ll start with my build and then what’s happening.

Thunderheader pipe

Fully rebuild tranny with jims updated shifter assembly

S&S super G

Primo oversized ring gear

Barnett clutch

New starter

103 inch motor

4 3/8 stroker

Flat top pistons

2012 heads with bigger valves

S&s 510 gear drive cams

Comp cam lifters

Dyno'd at 96 horsepower with 112 foot lbs torque

External oil cooler

New battery with tender

Compression releases

New screaming eagle ignition module

Msd coil

It fires up awesome and once warm idles nicely. If
you stab the throttle to rev it up quickly it chokes right out. Right to the point it’ll die. When your riding at low speeds it’s jerky, has lots decel pop at lower RPMs. At highway speeds, she hauls *** with no problems.
To try and fix the problem I’ve done intake seals, jetted the main to a 76, intermediate is a 31, replaced my petcock cause it had a slight leak, fuel is fresh, plugs and wires are new. I’ve double checked for a still possible intake leak and seems fine.

Any ideas wtf else it could be?

Thanks for any help 🍻

Look in the S&S setup instructions that came with the carb. Jetting guide, 96" and up, mixture screw 1 - 1 1/2 turns, intermediate .032 - .036, main .074 - .088. Your intermediate jet is too small and running lean. Also check the accelerator pump shot, which may not shooting enough fuel at low rpm. With the engine at operating temperature, open up the pump adjustment 1/4 turn at a time. When ya blip the throttle and a puff of black comes out the pipes, turn it back 1/4 turn.

Thanks for the reply. I’ll change my intermediate jet to a bigger and try the settings you suggest. Cheers 🍻
