If I use 2inch pull back riser will I have to change my cables?

No idea what bike you have...but the answer is most likely "no".

theres plenty of slack for 2 inch risers

I put 6" pull back risers on my 2008 Fat Bob woth no problems.

Not at all. I put 6" risers and LowRider bars on my 08 FXDC and had no problem at all. There are some pics in my profile album.
