wrong choice for a cam
When I was getting my engine rebuilt the guy doing the work shy'd me away from them. He said they were good at mid-level RPMs but then they fell away as the RPMs went above 4K. Based on discussion and cost he suggested the Andrew's 31H cams for me, but I know that there are some more radical cams out there that most people go with...
BLUF: the SE 255 cams are ok, might be better then stock, but on average, from what I have read on here, most people would opt for something else.

For my application, the SE 255 cams are perfect. I am riding a Street Glide and don't plan to spin the motor to the moon. I like the idea that the torque comes in early and stays there across the rpm range where I ride the most. To date I haven't spun my bike much over 4500 RPM which is about where the SE 255 noses over.
With a harley, I think it's safe to say that 99.9% of us want power in the low-mid range. I couldn't think of a reason to have a cam that kicks in at 4k rpm.
Maybe a drag bike thats leaving the gate at 3-4k rpm.
Although, whats to stop you from adjusting the cam timing a bit to get the powerband closer to where you want it.

The 255's are decent cams when used in the correct application. They are good for the heavier bikes and/or someone thats looking for more low end for 2-up riding, or someone who just likes to putt around. If you like riding your bike hard and pushing the rpms up, there not for you.
On one of the other Harley forums the SE 255 seems to be pretty popular in the 96in. engine with A/C and pipe mods. You can find the cam for less than $200 and it's a straight bolt-in. Cheap added power.
