If you are careful and take your time, it would still be under 12 hours doing it by yourself with all parts and tools already on hand. I would think 4-6 hours would be reasonable for a competent mechanic, if everything goes smoothly. Time would be less if you are cutting original push rods and putting in adjustable ones. A simple project can often be time consuming if a bolt strips, etc.... Doing work on my own bike, I can appreciate the guys who have to wrench for a living. You don't want to get ripped off, and the mechanic has to add some additional time for things that come up. Good work is not cheap.

I know exactly what you mean - when I had the Pipes put on, the guy who did it with me found one of the bolts in the head (?) had snapped off and needed to be drilled out and re tapped. So yep, unforeseen things can happen that is true.
Oh, and that is one reason I don't do my own work - just in case something comes up I don't know about or can handle
It's a little thing called, "flat-rate". The shop bills at flat-rate time, not actual time. I can't say if that flat-rate time of 12 hours is accurate.
