You can listen to internet experts repeating other's information all day long. Or you could go with manufacture recommended gap that is in the book. Get away from stock engine and gap is best found by power output. Sometimes .020 is best power. All depends on the build.

I'm running NGK Iridiums, one range colder than stock (DCPR8EIX), in Reaper's engine, which is built out to 98 ci @ 10.5:1 compression. For the past year or so, I ran a 0.035" gap. I recently replaced them, and decided to try a larger gap (thanks to reading articles/posts related to effect of spark plug gap). So, same plugs, but gapped to 0.040", and no other change to anything engine related. So far, I've picked up 2+ mpg, and she seems to pull a bit harder. So, it would seem that the 0.035" gap wasn't optimal for my build, and 0.040" is right on, or at least closer. I'm going to experiment a little with gaps, and see where the optimal gap lands.

I'd be real interested in what made best HP with 0.020 gap. I'd expect it to be an older points controlled bike where the coil voltage was under 10KV.

Probably be fine for the OP, since he never goes over 40MPH on his 883 Sportster.

yep, just about top out on the 883
the xls 1st gear is 60 mph on my setup
