North Alabama to Orlando Area

North Alabama to Orlando Area
I'm planning a trip hopefully very soon to Tavares, Fl where my Dad lives. He has some health issues so I want to take some time to go visit. Normally when I go to visit, I either fly or drive, so I know the Interstate routes.
My plan is to head to the panhandle, stay the night, then finish the trip going on highways 98/19 down to 44/441.
So, the question(s) are (1 where are any motorcycle friendly hotels say from Port St. Joe, Al to Perry, Fl? Or anywhere along the panhandle route. Not looking for luxury, just a good spot to stop with some local character, and (2 are the roads like 98 on the west side of Florida reasonably good for traveling? I realize these are subjective, but I'm looking for suggestions or recommendations.
I did post this question in the Southeast forum, but no one has had anything to offer yet.
I do have routes planned that are filtered as "quickest" which means a lot of Interstate riding, but I really am planning on taking at least two days and want to go back roads/highways.
I did see a post about going highway 441 to central Florida and that has some appeal. I would have to travel over to Georgia as such, but for a good ride, I don't mind the ride. Appreciate any suggestions.
