I assume that you are talking about the rear drive chain oiler. If so, just gently close the small adjuster screw on your oil pump.
Periodically, spray the chain with lube.
If you are trying to eliminated oil throw-off from your chain, this may or may not work.
These bikes are notorious for an oil weep out of the transmission drive shaft assembly. Usually the weep is between the output shaft and the spacer. Lots of info about this and fixes suggested on the various Shovelhead forum sites.
