I began habitually wearing hats when I started having more head than hair. A few years back I started wearing a black skullcap while riding. The elastic keeps it in place, no "tails" to whip in the wind, and it fits under a helmet and absorbs the sweat.
When I get off the bike, I always have it with me, too.
You should consider a bonnet.
Similar to a dew rag, it's made of cloth but has an enhanced tie down feature.
And because it's made of cloth your head will still freeze in the winter and crack on pavement. It's also quite fashionable in certain circles as modeled above.

Actually, one of my favorite riding hats for sunburn protection is a boonie hat. I took the little drawstring slide thing from an ACU cargo pocket and put it on the chin strap, so I can slide it up under my chin and it will hold, unlike those old leather slides they had.
It has enough brim to give me some back of neck protection, like a doo rag, but doesn't look like I'm trying to keep my jheri curl in place.
