I'm on the short side at 5'9". I have also grown super sensitive to wind noise and thats what led me on the wild goose chase for windshields and fairings that won't rattle my eyeballs out of my head. I actually prefer none but that isn't an option anymore. The sport fairings I can live with aesthetically.
That FXRT fairing is awesome. I kinda like the dual headlights of the FB though.
For an alternative to the DOUG-Z fairings there is this by Phil Birch http://www.philbirch.nl/indexaa.html. Tall enough to take wind pressure off the upper torso without buffeting around the head area, I find it works pretty well even at upper speeds on the fwy. Comes with necessary hardware and easy to mount, does not require sig relocation.

I have the same Phil Birch fairing and love it. I have personally tested it at 110mph+ and there is no buffeting at all. Air flows smoothly and linearlyover it.
I would say, if you have problems with wind noise and buffeting, buy a slippery profile full face or modular helmet - Schuberth C3 Pro springs to mind....

Nice, I like the look of that (and the Dougz) and how it preserves the dual look. With a Fatboy/Heritage headlamp you can go with a traditional batwing and get great touring protection, but you do lose a signature headlamps part of the Bob, and have the hassle of relocating the turns.
