If your really looking for the perfect fit and want something custom check out www.brcustoms.com ! I picked the the style i wanted and after a lengthy conversation with Bill i got them dialed in to the exact size i wanted and i love them!!

You mentioned you might change your seat out. If you go to a sprung seat, that will potentially change the riding position and the arm angles to your bars. Some dealers have a bike mock up that allows them to change seats, seat positions, pegs and bars to help the rider achieve the feel they want before they make mods and purchases. Faultline in the bay area of Cali has one. Not sure what they call it.

Just trying to save you the garage full of useless parts like me.

If nothing else new grips... I have small hands and I hate the ones that are on it.

After the first of the year I am having a custom seat made for it and a swing arm bag (though I am afraid I will tear that up since I already drag my floorboards)

Try the Diamond Black grips at your local dealership, they are very comfortable and aren't too big. I am 5'8 and they fit perfect.

Beautiful Springer by the way, but I am a little partial

I would go with 14' or 15" apes, but not much taller. But, that's just me. One thing to be sure of also, is the width at the base of the bars. Too wide, and they look crappy. With that profile on that bike, I would consider the 14' with them being slightly wider than normal width at the top. But,it's all in what you want. I just can't see those skinny sharp angled bars on that bike.
