U can get some of the el cheapo vintage grips, they are smaller i guess. I just figured with the paint scheme u was goin for a Classic/simple look.
Those "Z" bars look good, think thats what Cheesecake has!
You might want to look around and sit on a few bikes with taller apes....
most of us don't mind letting someone of the opposite sex sit on our bikes... if you ask nicely
I'm about 6'1" and have my 16" ape waiting to go on. When i sit on the bike these will hit me just above the shoulders, I have a similar seat to yours also. You might want to sit on a few first because what feels good sitting there and actually riding are two different things. (just my 2 cents)
