Has the Carb ever had a carb kit installed?
if not buy a S/E or Dynojet Kit as you are going to have to do a little more than just replace a jet...

I'm not a fan of the kits either...but for someone who knows very little..they can get them close...

How do you know the carb was stock to begin with and why did you put it on? Was there an issue with the existing carb?
Have you checked for air leaks on the manifold and VOES? An air leak can cause a lean condition at all speeds and barf back through the carb.
Have you tried to re-adjust the mixture, should not matter much at hi speeds but a good easy place to try.
45 & 190 should run OK on a stag one, maybe go to an aftermarket 46 or a 48 but adjusting the mixture will tell you that. The 190 should be plenty.
Carbs are funny sometimes, try to isolate the issue befor just tearing into them. My personal bike started breaking up under high throttle settings, soon after I changed the float needle. I figured it was some sort of dirt in the high speed circuit and it turned out to be a flying insect. Must have landed in the bowl area while I was working on it and I sealed him in when I reassembled. It was partially blocking the high speed jet..LOL
