Default changing bars without changing cables

So I'm looking to put some apes on my bones and I like the look of the road6 customs 14's. I would like 16 but can't afford much now and I know these will work with my stock cables. So is it just as easy as removing all the stuff mounted on the old bars and taking them off and then re attaching? I'm a Very novice mechanic so sorry if it is silly.

If you know the old cables will work this is a simple swap. Remove everything off the old bars and reinstall on new. No worries.

I just did something similar. Make sure you cover the tank with a towel or blanket to protect from dings. If you are re-using your stock grips the left one might be tough to get off to put on the new bars. If getting new grips it's simple. You should get or borrow a torque wrench to tighten the bar clamps properly and a service manual would help if you don't have one. You'll need torx bolt wrenches or sockets for the control screws if you don't have them already. Don't tighten everything completely until you have test fit for comfort while sitting on the bike. Even doing that I ended up re-adjusting the bar position and the lever angle afterward.

Awesome. What about those little zip tie like things that hold the wires together that seem to POP right into bars

You should be able to pop them right and and re-use them. That is what I did on mine.
