i am pretty comfy on my stock seat but really would like a backrest.

I hate gel but like memory foam. The sun heats gel up and it takes forever for it to cool down, I've never noticed any difference in comfort and the extreme heat retention can do bad things to the leather or foam that covers it. Any decent shop can alter an existing seat and keep it looking stock, cover and all. The trick to getting comfort out of the deluxe seat is to reduce the high wall in the back and rear sides, use better foam, and give it a chance to break in properly (about 1000 mi).

Thanks for the info Dude. I do have to do something, I'm getting old and need something for my azz and tailbone but I do want to keep it stock looking. I never considered the gel getting hot in the sun, a good tip to know and keep in mind. If I do something to my seat for my azz I want to do it right. I hate spending money and then it not work, on anything!

Interesting comment about the GEL. I live in So Cal, and it gets HOT AS HELL here. I haven't heard of that issue before but I guess it makes sense. Is it possible there is a difference between sewing a gel insert in vs a full GEL seat?

You may want to consider having your stock seat redone.
