Before the 96ci Big Twins the 1200 Sportster was second only to the VROD in performance stock for stock. With the introduction of the 96ci engine, the lighter Big Twins like the Street Bob are pretty close and it would really come down to rider (as most races often do).
Now, when it comes to modified bikes that's another story...
Weight of a new Sportster 1200 wet is about 580. (Solid mounts were at the 500 even mark.) I've seen Sportsters modified to produce about 100hp at the wheel giving them a 5.81 hp/lb ratio.
A big twin like the Street Bob weighs in at 667 wet. It would need to produce about 115 hp to match that ratio. A heavier bike like the Fat Boy Lo (731 lbs wet) would need to produce 126 hp to match it. Heaver still like a Road King Classic (810 lbs wet) would need almost 140 hp to match that kind of acceleration.
I don't know what HP numbers are stock for these engines but stock the 1200 has 7.34 lbs per ft/lb of torque and the Road King Classic comes in around 8.80 while the Street Bob is about 7.25. Like I said, the 96 ci engine in a lighter Big Twin is a quick Harley.
