Before the 96ci Big Twins the 1200 Sportster was second only to the VROD in performance stock for stock. With the introduction of the 96ci engine, the lighter Big Twins like the Street Bob are pretty close and it would really come down to rider (as most races often do).
I don't know what HP numbers are stock for these engines but stock the 1200 has 7.34 lbs per ft/lb of torque and the Road King Classic comes in around 8.80 while the Street Bob is about 7.25. Like I said, the 96 ci engine in a lighter Big Twin is a quick Harley.
I was checking out some bike reviews on Cycle World Magazine's web site and found dyno numbers for a 2010 Wide Glide and Sportster 48. The 48 made 61hp/66tq and the Wide Glide made 63.6hp/79tq. The Wide Glide ran a 13.31 ET 1/4 mile which is almost identical to some older rubber mount 1200 sportster reviews I found. Like Robotech said; best performer would depend on the rider.
Interesting fact: I have a 1973 copy of cycle magazine that has a multi bike superbike shootout that includes a 73 XLCH Sportster. That 4-speed ironhead only made 47hp on the dyno but the bike ran a 13.34/99mph 1/4 mile; so much for progress.
My Nightster modded with stage 1 intake, Vance and Hines short shots and with the ECU upgrade was dynoed at approximately 85HP and 86 ft/lbs. For it's thrust to weight is pretty much equal with a VROD, but the HP is clearly not. I know this is not really stock, but it's fairly close. I bet I could keep pretty close to a VROD at least until 50-60MPH. Then the torque runs out.

What ecu upgrade do you have? Those are sick numbers!
