Aluminum and iron don't mix very well and you do run the risk of having an iron plug sieze in an aluminum head if you don't. Especially if you try to change one when the engine is pretty warm. It is also easier to cross threat the plug if it is dry.
Achtung Baby! Should you use anti-seize! Jawohl. Every time. Electrolysis between two different metals (aluminum of the heads/iron of the sparkplugs) can cause badness. Heli-coil to the rescue! Anti-seize is preventative maintenance. Now... in ze fatherland you should be able to find it under the Lubro-moly brand and ze nummer for ze partz guy ist LM 508 Anti Seize. At least that is what I get from the BMW dealer. If you are military, surely they have the stuff at the AAFES service station.
Dielectric is to seal the spark plug wire boots and to prevent them from getting stuck on the spark plugs. Verstehen sie???

I didn't use anti-seize for years, I do now. One thing someone told me though was never tighten the plug on a hot or warm engine. Don't really know why, but I avoideddoing that and didn't have any issues with my plugs and no anti-seize.
