Default O2 Sensor

I ride a 2007 RKC with Vance & Hines Big Shots and a K & N high flow filter and V & H Fuelpak. Recently, My check engine light has been coming on when I'm riding at 65 or 70 MPH. My dealer told me the error code was my O2 sensor and to have V & H tweak my settings. V & H said if the Fuelpak was disconnected and I still got the check engine light, it was not their problem. Any ideas as to why this light comes on intermittently?
