I did the V&H true dual headers on my 05 Roadie a couple of years ago. Good fit. Had an issue with BUB headers, left side hit the frame, BUB took them back the first and second set but could not explain why they didn't fit. Went to V&H after that.
I have SE mufflers that I got from the dealership when new, combined with the headers the bike is pretty loud when you get on it, which I like. The heat issue is almost completely gone with the exception of the hottest days in traffic. Easy upgrade that gave multiple benefits.

( headers w/ cats were introduced in 2009 CA and Intl, 2010 49 State)
To swap to aftermarket headers will cost a fair bit ...performance gains if any would be marginal.
If you change to a "true dual" header the sound may be different.
If your question were more specific as to parts, you'd get more detailed responses
